Sunday Morning Frittatas

I love making a delicious breakfast on Sunday mornings before church. It helps get everyone in a good mood and ready to be in the grace of God. In this weeks case, it was to help everyone feel better, because once again, I have a houseful of sick people.

I especially enjoy making frittatas. They’re easy and so yummy, and you can make so many different varieties, so your family will never get bored. It’s easy to just throw together something quick with whatever you can find in your fridge or pantry.

Today I threw together this frittata mix, and we loved it! So naturally, I thought I would share. It’s fairly simple, and doesn’t require anything too out of the ordinary.

You will need:

  • 2 Italian sausages (casings removed)
  • 1 green bell pepper, chopped
  • 1 shallot, minced
  • 1 garlic clove, minced
  • 6 eggs + 2 egg whites
  • 1/2 cup Havarti cheese, grated
  • Half a tomato
  • 1 tbsp fresh parsley, minced
  • 1 green onion – thinly sliced
  • Salt and pepper
  1. In a large frying pan, throw in the sausages and shallot. Brown the sausage, while chopping it up into small pieces. Add the garlic and brown for about 30 seconds.
  2. In a small bowl, whisk together the 6 eggs + 2 egg whites, Havarti cheese, salt and pepper. Pour over sausage in pan. Sprinkle in the tomatoes evenly.
  3. Cook over medium-high heat for 2 minutes, occasionally lifting edge with spatula and tilting skillet to allow uncooked egg to flow underneath. Do not stir.
  4. Reduce heat to medium-low; cover. Cook 14-17 minutes or until eggs are set.
  5. Remove from heat. Top with fresh parsley and green onion.
